Cesare Marretti’s cuisine is a “cuisine of ideas,” his style is highly personal made up of linearity, simplicity, immediacy and speed. Technique is all at the service of speed, naturalness, spontaneity and an inner determination that every time he puts himself into play with fun and irony in a thousand combinations that draw on the wealth of cues gathered in the many kitchens and well metabolized. He relies on the freshness of raw materials and goes outside the box even in pastry, always putting in an imprint of freshness that remains imprinted. At the base of his cuisine are fresh seasonal fruits and vegetables, Italian, possibly organic “what nature gives is sacred, the ingredients must be assembled respecting their characteristics: in a dish you must perceive all the flavors.
